Bulgur salad
Bulgur is a wheat mixture with a nutty taste, which perfectly combines with the acid of the pomegranate and the bitterness of grapefruit. As a fresh tone , we add mint and parsley.

Fregola salad
Fregola pasta is also called pearl couscous. These balls are made from wheat dough and are steamed and dried. We combined these soft pearls with tomato, pickled red onion, cucumber, roasted chickpea mint and leaf celery.

Chicken Kabsa
Amagical traditional Arabic rice dish based on roasted chicken marinated in masala herbs, cinnamon and cumin with a sauce of tomato, raisins, parsley and salted lemon. This creamy sauce is served in combination with whole meal rice.
Imam Bayildi
A spicy dish made from slices of roasted eggplant with a chermoula of red onion, lentils, tomato, cumin, smoked paprika and toasted almond. We serve the eggplant with a sauce of yogurt and tahini.
